What to do with Gift Money

As I mentioned on Friday, Sunday (the 25th) was my birthday. I received a ton of cash. (Which I love, by the way). My problem is what to do with it.
I could put all or most of it towards debt, and take a nice chunk out of my credit card (tuition) debt. But I got that money as a gift. Shouldn't I spend it on something I want? Or at least spend some of it on something fun? But I know if I just blew it all, later I'd think about all that extra money I had and now it's all gone and there would be nothing to show for it.
For now, it is going into my ING account to earn some interest. If I find something I really want to buy, (or really need when I move), I'll have it waiting for me. However, how do you write thank you cards to those who gave you the money? When I write thank you cards I like to mention what I used it for so they can see the "fruits" of their present. Writing "Thanks for the money I stuck it all in my savings!" doesn't really have the same effect. haha
